Recipes: On the weekend menu| Honey-Calamansi Chicken, Pineapple-Banana Loaf, and Pancit Hab-hab

The weekend is super fast but I managed to make it meaningful with some me-time in the kitchen on Saturday. Here are my latest creations. Mind you, it’s my first time to cook pancit and thank God the ingredients did not go to waste.

For lunch, I made good use of our oven to make Honey-Calamansi Chicken. Instead of lemon, I used calamansi which are available in my pantry. This dish was inspired by Bill’s Food honey-lemon chicken wings. I like how garlicky this dish turned out, next time I’ll use 1/2 + cup of honey instead of just 1/4 and try using real lemons. Very easy to churn out from your kitchen, with prep time of about1 hour.

For tea-time, I baked these Pineapple-Banana Loaves. Below is the recipe:

Combine dry ingredients in a bowl:

3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Blend wet ingredients in your mixer:

1 cup undrained crushed pineapple
3 eggs
1 1/2 cups corn oil
2 cups mashed ripe bananas
2 teaspoons vanilla

Stir in dry ingredients slowly in the mixer until everything is well incorporated. Transfer to loaf pans, bake for about 40-60 minutes at 350 F (Gas 4-5).

Finally, the Pancit Hab-hab for dinner. The recipe is a bit complicated so I’ll post it next time.
