Impressions Christmas Special

The Impressions Christmas Special is a sit down dinner with an elegant four-course set menu. It’ll be available from December 23-25 only at a special holiday rate of P2,500++.

Appetizer: Pork Terrine with Cherry Compote

The dinner starts with this Pork Terrine with Cherry Compote that serves as an appetizing beginning. Pork Terrine is a French forcemeat loaf similar to a pâté. It is served with crostini and on the side, is a very light Apple and Herb Salad with Cherry Puree.

It was my first time to eat a French Pork Terrine, it is similar to embutido but with a lighter taste and coarser texture that makes it a good companion for toasted bread. I wasn’t very excited with the Cherry Compote at first, but this preserve went very well with the Terrine. The natural sweetness of cherries and its creaminess complimented the savory texture of the pork.

Even my kid loved it and it was a very interactive plate to start our special dinner.

 

The next entree is the Spiced Pumpkin Soup with Fennel. This isn’t just an ordinary pumpkin soup, it is served with Foie Gras Mousse (oh yes) that transforms this dish into a different experience.

Your bowl arrives with the Foie Gras Mousse and the actual pumpkin soup is carefully poured onto the mousse. It was a delight and a luxury to experience, the soup smells and tastes like Christmas.

The main entree is Impressions’ Braised Beef Brisket and Mushroom Gratin. It is more than just a slab of meat or an ordinary steak. This beef is cooked French-style and for over 5 hours to achieve the authentic French taste and tenderness.

This dish’s portion and serving is so generous, I only managed to eat half of the delicious, savory, and ultra-soft, easy-to-chew beef. You’ll appreciate the mushroom gratin that compliments the meat flavors with its soft, starchy, and creamy flavor. I can only imagine how wonderful this braised meat would be with rice!

Desserts and Mignardise

Dessert is a festive Raspberry Panna Cotta with Red Crumble, Raspberry Spiced Ganache, Coconut Lady Finger, and White Chocolate Vodka Ice Cream. You can request for Vodka to be omitted from your ice cream especially if dining with young children, like my son for example.

My favorite among the assortment of desserts (and these are all for just one person) is the White Chocolate Vodka Ice Cream. It was also my first time to enjoy a French Mignardise. I didn’t even know how to pronounce it (min-yar-dees) but basically, a mignardise is a “bite-sized, pretty dessert that’s served at the end of a meal”.

Sharing the mignardise and talking about which dessert to pick from red and green macroon, ube cannele, to ginger spiced pralines made the dinner more social and engaging. It was such a break from the demands and lure of modern technology.

Rackshack’s signature pork ribs are the real deal. The meat is so flavorful and tender, I can’t even remember if they’re boneless or not. All I know is I savored every bite of their glorious barbecue and was too busy mixing and matching each bites with Rackshack’s wide range of house sauces. Also, barbecue sauce in Rackshack is UNLIMITED.

Semiyan Kheer is also a dessert that we don’t see often, it is an Indian dessert that’s made with milk and vermicelli strands. A very interesting combination indeed.
