Sofitel Philippine Plaza: French Month Specials July 2017

Every month, Sofitel Philippine Plaza in Manila celebrates Flavors of the World and this July, Sofitel Manila puts the spotlight on French cuisine. They have flown in the French Master Chef Patrick Terrien himself, one of the shining stars of Le Cordon Bleu. You can read more about him here. I happen to have seen a news feature many years ago about Le Cordon Bleu and learning about one of their chefs being in Manila would mean as close as I can get to eating a Michelin Star meal in France.

The Chef’s culinary animations are now featured in the Sofitel Manila’s Spiral French Atelier. There’s always something new to look forward to in Spiral because of Flavors of the World.  Anyone who have seen the film Ratatouille will absolutely delight in these authentic French dishes that stem from Chef Patrick Terrien’s many years of experience (all around the world). As you know, some chefs are a legend in their realm and Chef Patrick is one of those most sought after kitchen masters.

At one point during lunch, the Chef roamed around looking at people as they enjoyed his creations. He asked our table, how is the food? Everyone had something to say. As for me, I was transported to a luxury hotel in France, maybe Sofitel Paris Le Faubourg where I am giving compliments to this French Master Chef.

French Month Activities at Sofitel Philippine Plaza

Aside from the featured French dishes at Spiral, there are more special experiences that await guests this July at Sofitel. These activities are open to all guests who want to enjoy the French Culinary Culture. One thing you’ll walk away with is how serious the French are with their food with several rituals and customs that revolve around well, eating.

If I have to choose one, I highly recommend the French Wine Dinner. It is a very special experience with Sofitel’s French wine connoisseur, Tanguy Gras where guests can freely learn basic to intermediate knowledge on how to pair French wine with food. My husband and I have been to a Sofitel Wine Dinner last year. It is one of our most special and memorable dates, especially it was time for us to level up our dating game and F&B knowledge as grown ups of the world :)

Summer Feels: Sustainable Seafood Experience at Sofitel Philippine Plaza

With luxury comes great responsibility! Accor Hotels Philippines which is comprised by Mercure Manila Ortigas, Novotel Manila Araneta Center, Raffles and Fairmont Makati, and Sofitel Philippine Plaza raised awareness and renewed their commitment to sustainable fishing practices.

What is Sustainable Seafood?

It’s not everyday that we really think of where our sushi came from but if you want to be a responsible foodie, take note that the following species are endangered: shark, ray, bluefin tuna, grouper, sturgeon, and wild caviar. Accor Hotels in the Philippines do not serve these species as part of their commitment to sustainable seafood.

Another way hotels can support green fishing practices is by sourcing more seafood items in the Philippines. Sofitel Philippine Plaza Manila serves sustainable seafood with room service and in all its restaurants, including Spiral, Le Bar, Sunset Bar, Snaps, Club Millesime. Currently, 10% of its seafood items, including mackerel, lobster and tuna from the Philippines (except yellow fin), are sourced through certified MSC/ASC sustainable seafood providers that offer sustainable seafood and featured at Spiral’s “Hooked at Spiral” seafood night every Wednesday. The hotel is committed to increasing its sustainable seafood usage to 50% in the next three years. Good news to our fishermen!

To raise further awareness and promote sustainability, Accor Hotels hosted a gala dinner at Sofitel Philippine Plaza’s picturesque Sunset Bar. Here, the five hotels presented dishes made with sustainable seafood.

Sofitel Spiral offers Chinese New Year Specials: What to Look For in the Buffet!

Sofitel Philippine Plaza Manila has a flavorful feast in store for the upcoming Chinese New Year from January 25 to 29. The iconic Spiral Buffet will feature Year of the Rooster specials prepared by  Spiral’s culinary artisan, Chinese Chef Michael Tai.

In our recent Spiral buffet dining experience, these specials were on preview and they look as amazing as they taste. It is tradition and belief that starting the year with prosperity and happiness will bring good fortune for the rest of the new year. The “Bian Nian Hao He” concept of Sofitel  makes this feast possible and memorable for all families and friends to experience.

The featured menu includes recipes from the Canton and Sichuan province, plus select dishes from Taiwan. Here’s a quick guide on what these dishes are all about:

Cantonese – known for its freshness and highlighting the natural taste of ingredients
Sze Chuan – known for bold and spicy flavors, uses a lot of garlic, chili peppers, and the famous Sze Chuan pepper.
Hakka – known for simple recipes and ingredients but inspires the finest flavors

Abalone in Superior Sauce – did you know that abalone is believed to bring good fortune and wealth? It stands for assurance and surplus hence eating abalone translates to an abundance of wealth.

Hong Kong Style Steamed Fish – the Chinese believe that eating the whole fish with the head and tail intact symbolizes a year’s beginning all the way to its end.

Braised Dry Mussel with Sea Moss – both dry mussel and sea moss is believed to bring good luck

Golden Prawn in Salted Egg Yolk – prawns symbolize the sound of laughter that represents a happy life

Sauteed Scallop with Sweet Wallnut in XO Sauce – eating this dish is believed to help in conceiving children as well as symbolizing opportunities or opening of new horizon.

Sofitel Manila could not make Chinese New Year more special. What I really like about the offerings aside from their taste is how auspicious everything looks. It does contribute to a positive feeling and sentiments of happiness, wealth, and prosperity while enjoying the bountiful feast.
