Home and Living: Happy Baker, Banana Muffins

I am always happy when I get to bake. First, it reminds me of carefree days with my sister Joni who took turns with me in baking in the kitchen. It was one delicious sibling rivalry and I cannot forget her carrot pineapple cake topped with cream frosting and shaved almonds. Only she can make that. Tonight I’ve made my second batch of Banana Crumble muffins because we had too many bananas in the pantry. I cannot remember the last time my hands were dusted with baking soda and powder. Though I’ve been making polvorons every now and then (cheaper to make than buy).

These are the best banana muffins I’ve ever made, the difference lies on the crumble toppings which has hints of grounded cinnamon combined with the crunchiness of brown sugar and toasted flour. One of my many dreams is to make a living from cooking/baking and I might just have that extra time this Christmas to sell these yum-o monsters. I like how my recipe turns out soft, tasty, moist, and crunchy on top muffins.

Baking takes me to another world outside cyberspace. There’s no harm I already own my dream cafe business. Who knows? 🙂
